The cooperative Union de Ejidos San Fernando is integrated by small holders, each small holder owns no more than 5 ha of land. The cooperative with a lot of effort and organisation have structured all the producers to point of standardise their coffee plots, harvesting techniques and coffee plantations, this has an impact in the quality of the coffee offered by this coop. The family Herrera, producers of Geisha cultivar, uses the natural process technique. They take advantage of the regional healthy soil. The green coffee beans are tested and cupped to guarantee the quality of this special process.
